Experience Honduras Sagastume by La Cabra – a vibrant journey through generations of coffee craftsmanship. Rooted in Pedro Sagastume's century-long legacy in Santa Barbara, Honduras, this washed Pacas variety is a great example of classic Honduran coffee. Harvested amidst the lush expanses of Los Quetzales, each sip reveals the rich flavors nurtured by the Sagastume family's dedication. From the careful fermentation to the gentle drying under solar tunnels, every step reflects their expertise. Delight in the lively notes of blackberry and rhubarb, balanced by the comforting hints of hazelnut and milk chocolate.


Why We Like It and Resting Time:
This washed pacas is incredibly balanced and sweet! We find a deep blackberry note that integrates into a sweet milk chocolate finish. This coffee is very flexible in all brewing methods. If you want to have a very present blackberry acidity we recommend you brew this on pourover, while on immersion and espresso this coffee will taste like chocolate covered berries. We found this coffee to fully open up around 4 weeks off roast where the blackberry acidity becomes much more structured and present with the sweet milk chocolate finish.
