Story:
Details:

This coffee is a prime example of how fermentation can help boost quality in coffee even in coffees that are already clean! In Moonwake’s Chorso Kebele we find a classic washed Ethiopian coffee profile but underneath a ton of vibrant citrus notes with a clean floral finish. This coffee can be brewed and pushed in a variety of ways especially with higher agitation methods that emphasize acidity. We really think this is a stellar example of strong processing techniques that help emphasize traditional flavor profiles. This coffee will be best enjoyed after at least 3 weeks of rest!

It’s incredible to see how far fermentation processes have advanced in Ethiopia, and this coffee is a testament to that progress of natural terroir boosting fermentation. When we first cupped it, we were excited by its distinct classic clean washed Ethiopian landrace qualities paired with an extraordinary vibrancy that sets it apart from the typically delicate, nuanced profiles. The tea and floral notes leap from the cup, supported by remarkable sweetness in a mostly orange citrus category.

This type of near-ultralight territory of profiles typically requires a 4 week rest period before brewing to pick up on all the great qualities this coffee has to offer. We recommend a higher brewing temperature but also recommend experimenting with extraction levels to find the best balance of sweetness and nuanced flavors.

Pre-rested Gems: We take great care in curating our selection of freshly roasted coffees for each release, but occasionally we have extra batches from our production runs that rest on our shelves.

We aim to discount these coffees when they are over 1 month off roast even though we believe they perform well even after 6-10 weeks of rest, with some coffees even peaking in the 12-15 week rest range. This selection of coffees will rotate depending on releases and availability. You may find some hidden gems at a heavily discounted price!

    Flat and uninspired

For an extended washed Ethiopian coffee, this is awfully muted, flat and uninspired. I wasn’t getting enough extraction out of my xBloom Studio, and gave it a go with both a Melodrip Colum and an Oragami - played with the grind on my Pietro to extend the extraction and it was still flat as a board.
