This coffee is what we’d classify as an expressive clean coffee! The flavors are bright, clear, and apparent in the cup due to extended fermentation while the finish has a clean and sweet linger from a washed process. We find a lot of lime and citrus acidity enveloped in a clean floral profile. We suggest you brew this coffee and pay attention to how the acidity and fruit flavors jump out while the finish remains clean!

The Papayo beans in this lot are a rare treat, believed to have roots as an Ethiopian Landrace. They undergo a carefully managed 24-hour cherry hold, followed by a 36-hour aerobic fermentation. This is followed by a traditional washed process and slow drying on raised beds for 20 days, ensuring an extraordinary flavor experience.

Bright and clean with a juicy limeade-like acidity, this Papayo delivers layers of pomegranate and blood orange sweetness, finishing with a floral clarity that lingers beautifully in every sip.
