This coffee is a great example of well processed washed coffee! We find a very clean presentation of expressive acidity and fruits that lean towards yellow with complex layering and sweetness. What's really interesting about this coffee is this is all coming from Castillo! We generally find this level of expression from Pink Bourbon or Chiroso so we're excited for you to try this one. We recommend you rest this coffee for at least 45 days and find Apollon's Gold coffees to begin opening up around 60 days off roast (and more!).

Castillo is a hybrid cultivar as a result of crossbreeding the Arabica and Catimor cultivars, and was originally produced as a means of fulfilling quantity, but not high quality. This varietal has of course evolved since its origin and is respected on its own, but on rare occasions you get a Castillo that outperforms all the other Columbian varietals. We believe this is one of those lots, and we're pretty excited about it.

This coffee is incredibly fruity and bright, and represents the Tolima terroir impeccably. Grown at a very high elevation, it has a very refined body structure and is super smooth, just a pleasure to drink. It's super clean while retaining subtle complexities, and despite being very bright, it is perfectly balanced out by its distinct sweetness.

In the cup we find a smooth and sweet body akin to guava and peach, with a very pleasant grapefruit acidity and brightness.
