This week’s secret stash is one of the sweetest coffees I’ve tasted and is a Yellow Pacamara from Apollon’s Gold and producer Erwin “Wingo” Mierisch! This pacamara is naturally processed and has fruit forward notes of Muscat, Passionfruit, and Mangosteen with massive sweetness. If you enjoyed the profile from the last release of Pepe Jijon’s coffee wave natural, this coffee is very tropical tasting but has a heavy syrupy sweet finish instead of a floral finish! What is interesting about Pacamara and the profile of this coffee is how sweetness lingers on your palate. Take a look at the size of the beans and you’ll notice they are HUGE! As with most Apollon’s Gold coffees, I suggest you rest this coffee for a week or two after you receive it but you should brew a cup and see how the coffee opens up across the coming weeks.
