Gesha is one of the most celebrated varieties in specialty coffee, valued for its floral aromatics, delicate structure, and ability to reflect the environment where it is grown. This coffee comes from La Miel, a farm founded by Yulisa Ester Carhuallocllo and her husband, Jeremías Chinguel Huancas, in Peru’s Chirinos region. Through careful cultivation and meticulous processing, the farm focuses on bringing out the natural expression of the coffee rather than relying on heavy processing to create flavor.
Unlike heavily processed coffees that rely on fermentation to create bold flavors, this washed Gesha highlights clarity and precision. The washed process allows the Gesha variety to express itself with greater transparency, revealing the characteristics developed through the farm’s environment and cultivation.
In the cup, La Miel Peru Washed Gesha presents a delicate balance of tropical sweetness, mandarin orange brightness, and floral honeysuckle notes, supported by a silky mouthfeel and clean finish. Through years of experimentation with fermentation and post-harvest techniques, Jamison and his team have developed coffees that highlight the connection between origin, variety, and processing.
Symbiosis is a Panama Geisha that represents this approach. The coffee undergoes more than 100 hours of natural anaerobic extended fermentation in sealed tanks, where a controlled oxygen-free environment allows deeper fruit development and greater aromatic complexity while preserving the distinctive character of the Geisha variety.
Rather than masking the qualities that make Geisha unique, the fermentation process enhances its natural expression. The result is a coffee with remarkable fruit intensity, layered aromatics, and a sweetness that continues to evolve as the cup cools.

Created in collaboration with Black & White Coffee, Lychee Berry Lemonade brings together two coffees with distinct personalities: Baolian Lychee Peach, known for its lychee candy sweetness and tea-like character, and Sebastian Ramirez’s Red Fruits, which contributes layers of strawberry and tropical fruit.
Through advanced processing and co-fermentation techniques, these coffees come together to create a profile that feels closer to a crafted flavor composition than a traditional blend. The result is a vibrant cup with candy-like lychee sweetness, strawberry tea notes, and a structured lemonade-like acidity that develops throughout the brew.

HACHI “GIN” 銀 explores this idea by showing how far a familiar variety like Caturra can be pushed. This Caturra comes from the Hachi Coffee Project, a collaboration between Diego Bermudez of Colombia and Allan Hartmann of Panama. Their work focuses on exploring the expressive potential of non-Gesha varieties through careful variety selection, controlled fermentation, and precise processing.
Processed using the Enzyflow Washed method, this coffee highlights the balance between clarity and complexity. After depulping, the cherries undergo a controlled 24-hour fermentation, allowing the coffee to develop greater aromatic intensity while maintaining a clean and structured cup profile.
The result is a vivid and expressive Caturra that challenges traditional expectations of the variety. In the cup, grapefruit and raspberry notes lead with bright citrus acidity, followed by nectarine sweetness and a subtle cinnamon finish. As the coffee cools, its layers continue to unfold, revealing a dynamic combination of fruit, florals, and sweetness.
