This coffee comes from Ecuadorian Farm Vinka, producers María and Carlos Fernanda and roasted by Sorellina (Edmonton, Canada)! This is an exceptional presentation of the Sidra varietal and coffee processing. 

 

Why We Like it:

This coffee is like sipping a red fruit pastry! We find a very intense presentation of red fruit acidity (raspberries), layered sweetness (yogurt), enveloped in a sweet and clean profile. As the coffee cools, the raspberry acidity becomes structured and tied together to a hibiscus and silky finish. This coffee is also exceptionally roasted by Sorellina and offers an incredibly expressive profile and high sweetness. We suggest you brew one cup when you get this coffee in and try it across the following weeks to see how it opens up! 

If you have never had a red fruit profiled Sidra or Sidra in general, this will be a fantastic introduction to this varietal. This is Brian's favorite varietal as it generally has a very dynamic and punchy profile with nice florality!

Vinka is a specialty coffee farm placed in the southern Ecuadorian Andes, where the cloud forest meets the dry montane shrubland. This unique confluence of ecosystems creates a microclimate with dynamic shifts between wet and dry air throughout the day, providing an ideal environment for cultivating our Sidra varietal.

As scientists and university researchers specializing in conservation, ecology, biodiversity, and environmental quality, we—María Fernanda and Carlos—have dedicated ourselves to transforming a former cattle ranch into a thriving haven for specialty coffee. Through soil restoration and biodiversity enhancement, we’ve improved soil functionality, ensuring coffee quality while demonstrating how sustainable management and conservation practices can support an eco-friendly monoculture of coffee plants. After three years of hard work, we proudly present our first harvest, producing both natural and washed coffees.


• Washed Process: Once harvested and carefully hand-selected, the cherries were depulped and underwent a 72-hour solid-phase fermentation. Afterward, they were washed and dried on raised, stacked beds in a marquesina.
