This is an exciting release coming from my friend Will of Mirra Coffee and it’s the second time we’ve featured a Wush Wush on xBloom! This Washed Colombian Wush Wush from Paola Trujillo is popping with citrus and guava acidity, and is wrapped in a marshmallow tasting sweetness. This is a very unique expression of Wush Wush and processing as I often do not get marshmallow notes out of traditional washed coffees!
By pushing this coffee harder with a finer grind the marshmallowy notes becomes even more apparent. This recipe opts for a balance in citrus acidity with the marshmallow sweetness. We recommend you stretch the coffee out to 1:17 and play with finer grinds. Please let this rest for at least 3-4 weeks before brewing!
