This is one of the loudest and most expressive coffees you'll ever taste! It is a perfect introduction to advanced processed Colombian coffees. In the cup we find bright yellow fruits such as Mango, a Haribo Peach sweetness, and intense acidity and florality. This coffee when hot is candylike and when cooled showcases how layered processing can be even among high quality varietals like gesha. Your entire room is going to smell like candy when this coffee is brewed!

About the Processing:
Introducing Letty Bermudez, a testament to innovation and pushing the far limits of coffee excellence. This special gesha lot was commissioned by Manhattan’s Ben Morrow from the visionary coffee producer Diego Bermudez. The coffee cherries undergo a complex double fermentation thermal shock process. This process includes 60 hours of aerobic fermentation in a pressurized tank, followed by 36 hours of anaerobic fermentation at 18°C with Leuconostoc bacteria, and a meticulous thermal shock finish. The drying is perfected in the Enigma dryer for 29 hours, achieving an ideal humidity of 10%.
