This is another super sweet and expressive coffee coming from Erwin "Wingo" Miersch roasted by our good friends at Apollon's Gold. We find these unique varietals coming from Nicaragua to have lovely intensity and in this Yellow Pacas we find grapes, redfruits, and nice florals. When the cup cools, there's good balance and structure between each of the notes and the acidity becomes layered with nice rounding. This is a great expression of traditional processing where you get a fruit forward expression in the cup while everything remains clean!

For best results we recommend you rest this coffee for at least 60 days before brewing! We find these naturally processed coffees roasted by Apollon's Gold to really start peaking around 75 days off roast.

Yellow Pacas varietal is still unknown and only available from Fincas Mierisch for just a few amount. Since 2024, we have been honored to roast and offer this coffee as their long term partner. When we tried the washed lot of this coffee in 2024, we thought natural process might go even better on this cultivar and it indeed went well on the robust flavors of Yellow Pacas varietal.
