This week’s Secret Stash release is a lovely expression of clean washed Ethiopian coffee from producer Tagel Alemayehu roasted by Massachusetts Roaster Little Wolf! In the cup I taste an Earl Grey tea forward presentation, tropical acidity, and a very clean and floral presentation. When cooled, the tropical acidity becomes structured and the florality and sweetness of the cup really starts to pop.

I had the chance of visiting Little Wolf in Boston and tasting and dialing in this coffee with Chris, their owner! We arrived at a recipe that uses a coarse grind with tons of pulse pouring that pushes the coffee fairly hard and gives us a high clarity presentation. I find this style of brewing to work really well to present cleaner coffees and roasts that can handle higher extractions. You’ll find a very harmonious presentation between the acidity and the sweetness with this style of brew. I’ll also recommend you experiment with a 1:16 ratio finer grind + agitation style of brew in which you’ll find the acidity to be more forward.
