This week we have an expressive anaerobic natural coffee from Thailand roasted by my friend Pack Kati! Pack recently got third at US Brewers Cup and started his own roasting company called Newbery St located in Boston, Massachusetts. This coffee is quite expressive with vibrant flavors and is a great representation of the progress Thai coffee producers have been making in the past years. In the cup, I find a nice cherry like acidity, deeper wine notes, with a sweet finish. I have found this coffee to open up around two weeks off roast where the acidity really starts to pop!
