This secret stash is from our friends Pair Cupworks (Mesa, Arizona) and producer Julio Cesar Madrid! This is a washed pink bourbon that is super juicy filled and reminds me of honey covered stone fruits. I’ve been really enjoying this expression of a cleaner pink bourbon profile and I think this coffee will be very enjoyable to those of you who enjoy washed coffees. I’m brewing this coffee at 1:16 as it emphasizes a more intense honey note but I would experiment with 1:17 and a coarser grind to make the dynamics really pop.

What does 🕰️ mean?

We take great care in curating our selection of freshly roasted coffees for each release, but occasionally we have extra batches from our production runs that rest on our shelves.

We aim to discount these coffees when they are over 1 month off roast even though we believe they perform well even after 6-10 weeks of rest, with some coffees even peaking in the 12-15 week rest range. This selection of coffees will rotate depending on releases and availability. You may find some hidden gems at a heavily discounted price!
