This week’s Secret Stash is an exciting expression of gesha and Honduran terroir from Fincas Miersch! This washed gesha comes from their El Triangulo lot and it’s one of the most expressive washed coffees I’ve tasted. I find intense tropical acidity that is structured and layered, a jasmine tea-like presentation, and a floral and clean finish. Once the cup cools this acidity becomes very defined and pops even more! The recipe I went for opts for making it tropical acidity forward but you can push the coffee into 1:17-1:18 ratios for a more harmonious presentation.  


Honduran coffees of this caliber are hard to come by and the level of acidity and cleanliness is a great example of well processed quality washed coffees. Please let this coffee rest for at least 3 weeks for the best experience!
