In southern Colombia, the state of Huila is truly the heartbeat of advancement in specialty coffee. At his family farm, Finca Monteblanco, Rodrigo Sanchez continues this progress by transferring his harvested coffee into sealed tanks to create an anaerobic environment for fermentation. Sanchez's hard work resulted in this pleasant cup with notes of sparkling white grape juice, passion fruit, and key lime meringue.
