At LATE Café in Belfast, the coffee experience is designed to slow you down — just enough to savour the moment.
This neighbourhood space is where craftsmanship meets calm. The philosophy is simple: a minimal, intentional approach to brewing that invites customers to pause, connect, and enjoy the ritual. Or as the team says, “Better late than never.”
Recently, LATE Café introduced the xBloom Studio as their featured brew method — and it’s been transforming the bar experience ever since.

At LATE, the team curates a limited coffee menu featuring Process Coffee and rotating guest roasters from around the world. Each coffee is paired with a custom brew profile, designed and refined using the xBloom Studio.
Customers can select their coffee from a single-cup menu, then follow the process down the bar to watch their coffee come to life through the precision and elegance of the Studio.
“The feedback on this experience has been great,” says the LATE team. “The xBloom has been a game changer in allowing us to curate specific brew recipes to showcase limited menu coffees in the shop, and add another layer to the customer experience at LATE.”
Precision Meets Presence

With the xBloom Studio, every cup reflects both the science and art of modern brewing. By letting the roaster’s vision guide each extraction, the team can highlight the nuances of each coffee — all while creating a visually engaging experience for guests.
The result? A brewing ritual that feels both personal and precise — a balance of technology and human touch that perfectly complements LATE Café’s ethos of slowing down and savouring what matters.
