Tanat — Nestor Lasso [Ombligon]
This is one of the most talked-about coffees in specialty coffee right now. Nestor Lasso farms the rare Ombligon variety at Finca El Diviso in Pitalito, Huila, Colombia — at over 1,750 meters above sea level. Ombligon gets its name from the small nub on the cherry that resembles a belly button (ombligo in Spanish), and is thought to be a natural mutation of an Ethiopian heirloom variety. It first reached a global audience in 2022 when it helped win the World Barista Championship.
Tanat's version goes through an intensive process: 48 hours of open-air oxidation, a rest period, 60 hours of controlled-temperature fermentation, then 24 hours of anaerobic fermentation with mosto recirculation — the sweet juice from the cherries is cycled back through to deepen flavour complexity. The result is explosive: strawberry jam, raspberry, and peach jam, with a vivid fruit-forward sweetness that is completely unlike anything that comes from a standard roast. It is the kind of coffee that makes someone stop mid-sip.
