This week's secret stash is a super fun and expressive coffee from Jhonathan Gasca and Still Coffee Roasters! This is a loud advanced processed washed sidra bursting with berry notes, grapes, sugar, and a tea like finish. When hot I found tons of vibrant blueberry and raspberry notes all wrapped in a layered mouth feel and a tea like finish. You can taste the fermentation where the notes have an additional layer and extend deeply. When cooled, there's a really nice structure of acidity that is tied to a jasmine tea finish. This style of coffee is what I would classify as expressive clean where the processing is very apparent in the cup yet it has a clean presentation. This is a coffee that benefits greatly from rest so I suggest you taste the coffee as it ages.
We got this coffee a month ahead so it would rest! I found this roast style leans towards ultralight and requires at least 6 weeks of rest with the coffee really opening up with about 8 weeks of rest.
