This is a super sweet honey processed Ethiopia from Yaye Chericho! In the cup we find sweet red fruits in the form of cherries, green grapes, and a starfruit like-acidity. When cooled, there is lovely structure with the acidity becoming defined and the sweetness increasing. The finish has a rooibos tea presentation while remaining round and sweet. We suggest you let this coffee cool to near room-temperature before tasting to experience a fruity/dynamic acidity yet a delicate and sweet finish found in many Ethiopian coffees! 

For best results we recommend you rest this coffee for 3+ weeks! 

 

From Passenger: 

Established in 2021, the Yaye Chericho washing station is a fairly new operation, but one that has already gained wide recognition for outstanding quality. Located in the Sidama zone, the site collects coffee cherries from various producers in the woreda of Arbegona, including from the neighboring villages of Yaye and Chericho - the communities that inspired its name. This honey processed lot is brimming with candy-like red fruit and tropical flavors. We’re finding dried cherry, fig, and kiwi on the nose, followed by additional fruit tones of starfruit, green grape, and rooibos tea.
