We’re happy to be featuring this incredible washed Colombian Geisha roasted by Leaves in Tokyo! This is a fantastic example of washed processed Geisha grown in Colombia due to its structure, complexity, and clean presentation. In the cup we find a tropical presence of yellow peach, high clarity red fruits, a cane sugar-like sweetness, and clean florals. Please read our tasting impressions below:
Hot:
White flower aromatics transition into sweet yellow peaches with a very clean and sweet cane sugar in the finish. When hot the cup is super floral forward with deep aromatics and a sweet and super clean finish. At this temperature this coffee tastes like a sweet jasmine tea!
Warm:
As the cup cools, a red fruit/stone fruit acidity pops up while florals start to take a back seat. There is a long linger of cane sugar sweetness after the acidity. The entire cup starts to become high definition and complex with layered acidity that transitions into deep florals and a sweet finish at this temperature. Pay attention to how the acidity remains on your tongue and when the florals start to appear.
Cool:
Near room temperature, the entire cup is at its peak with strong articulation of acidity and long linger of sweetness and florality. The red fruits become very structured and forward and then extend into deep white florals. There is also a slight yellow peach tropical note at the end of the red fruit acidity so pay attention to that! The finish is very clean with cane sugar sweetness that lingers on your palate.
For best results, we suggest you to rest this coffee for at least 3+ weeks!
