This is a very exciting coffee roasted by Onyx that showcases expressive and high quality Panama terroir alongside classic Ethiopian heritage. This coffee tastes like a combo of florals you find in many Panamanian coffees mixed together with the expressive acidity and fruit notes you find in naturally processed Ethiopian coffees.
Read our tasting experience below:
Hot: Rose and White florals forward. Big sweetness and a round and long lingering sweetness. White tea in the finish that becomes sweet!
Warm: Blueberry and Stonefruit/tropical acidity starts to build up and pop up through the florals and sweetness. Good definition of punchy acidity in the form of apricot and blueberry.
Cool: Incredible structure and balance between florality and acidity. Very loud and expressive at this temperature! Super dynamic sipping experience here with a punch of florals and fruits on the palate.
For best results, we recommend you rest this coffee for at least 3+ weeks!
From Onyx:
Established in 1918 by Alexander Duncan, Kotowa is a historic, family-run estate in Boquete, Panama, producing exceptional coffee on the volcanic slopes of the Barú Volcano. This microlot comes from the Duncan Farm, where an Ethiopia Heirloom variety is cultivated in rich volcanic soil beneath cool mountain breezes, allowing the cherries to mature slowly and develop a distinctive, expressive cup profile.
