Hey Everyone,


This is an exciting Natural Lactic Typica from producers Nui and Aoy in Chiang Mai roasted by my friend Pack Katisomsakul (US Brewers Cup 3rd Place) of Newbery street that showcases advanced processing and the growth of quality Thai coffee. Lactic Acid Bacteria is introduced through homemade yogurt into the fermentation tank and fermented for 5 days creating a super creamy and high bodied cup. 


When brewing this coffee I got reminded of naturally processed Ethiopian blueberry bombs except the aromatics lean more towards black tea and dried tea leaves of Thai coffee. When hot, I find a blueberry yogurt creamy presentation with blackberry and stone fruit acidity. Once the cup starts to cool, the Thai coffee flavor profile comes out showcasing a black milk-tea like profile alongside an expressive blueberry/stonefruit acidity and the creamy body. This is a really impressive presentation of Thai coffee and I recommend you taste this at various temperatures to see how the acidity shifts, the body develops, and where the Thai coffee terroir appears. 



For best results, I recommend you rest this coffee for at least 3+ weeks!
