This is a wonderfully expressive yet clean Colombian Gesha from producer Marlon Bolaños and Modcup! This presentation of gesha showcases what we would define as “expressive clean” where the coffee is fermented (held in cherry) for 48 hours and then is washed. The result is a boosted level of florals, sweetness, and acidity, yet the finish and presentation of the coffee is clean. Read our tasting impressions below!
Hot: When hot, the cup is floral and sweetness forward! We find white flowers, jasmine, a honey-like sweetness, with a long linger of florality. At this temperature, a rounder citric acidity is in the back enveloped by lovely sweetness.
Warm: As the cup cools, there is a strong definition of acidity in the form of citrus and lemon. This type of acidity becomes much more structured as the cup starts to cool. The florals take a backseat and harmonize with the acidity while there is a long linger of sweetness. The whole presentation is very clean. You can taste the held-in cherry fermentation alongside the washed process here.
Room Temp: When almost fully cooled, there is beautiful harmony and structure of acidity, florals, and sweetness. We find the lemon and citric acidity to be at the highest here! The acidity is the tied to jasmine/white flower florals that go into a very long sweetness. The cup is dynamic, elegant, and very silky here.
For best results, we recommend you rest this coffee for at least 4+ weeks!
