We’re excited to be featuring this expressive double anaerobic naturally processed pink bourbon from Deiro Garcia of Lord Voldemort roasted by Standout Coffee (Stockholm, Sweden). This coffee is loud and expressive with black and purple fruits in the form of grapes and blackberries. We find intense sweetness, acidity, and a long juicy finish. There’s a guava like sweetness throughout the cup that lingers long on your palate. As the coffee cools every note becomes enhanced with the acidity becoming very structured yet the processing remains in tact. We suggest you rest this coffee and see how the cup profile changes with time!
For best results, we recommend you rest this coffee for at least 3+ weeks!
From Standout:
Cherries are harvested at peak ripeness before entering an initial 48-hour anaerobic fermentation in tanks. A second anaerobic stage follows for 72 hours, during which leachate is continually reintroduced to promote homogeneous fermentation.
The coffee is then dried as a natural under canopies for 22 days.
This combination of whole-cherry drying and controlled fermentation helps shape the coffee’s fruit-forward expression. In the cup, that expression brings together tropical fruit, dark berries and a sustained, juicy finish.
