This is a lovely washed Ethiopian expression from Yabitu Koba! This is a great example of well processed clean Ethiopian landraces and we find incredible structure and depth in the cup. There is clean and expressive stonefruit acidity in the form of raspberries, key lime, and a hibiscus florality. This is a coffee that can be pushed quite hard and we suggest you experiment with finer grinds and longer ratios to see what you can pull out.  Let this one cool before tasting! 


For best results, we recommend you rest this coffee for at least 3+ weeks!
