Hey Everyone,
This week’s Secret Stash is a truly unique coffee! Seeds from Panama were planted in Brazil resulting in shorter trees (Ethiopian dwarf) grown at Rodomunho and the coffee was naturally processed then fermented in sealed tanks and dark room dried.
This coffee is quite unique as it reminds me of a fruity Ethiopian natural smashed together with a Brazilian coffee. In the cup I find dynamic stone fruit acidity, a tea like body, and nice brazilian nutty notes. As the cup starts to cool, a key-lime and green acidity locks in and the cup has highly defined acidity. Despite the processing, the cup is quite tame when it comes to fermentation and the entire cup is fairly structured. I find you need to let these types of coffees really cool to enjoy them and they will really open up with a lot of rest!
For best results, I find you need to rest this coffee for at least 3+ weeks!
