This week’s Secret Stash comes from one of my favorite roasters, Thankfully Coffee (Auburn, AL) and it’s a proper representation of why we all enjoy well processed washed Typica Mejorados! This specific lot comes from Abel Salinas of Finca Arashi and it’s super vibrant and clean. When hot, I get lilac florals, a bright lemon candy acidity, and a sweet tea-like finish. When warm, the structure of acidity is incredibly layered with strong articulation. The lemon acidity is super crisp, followed by cleanly presented lilac florals, all with a long lingering clean finish. This Typica Mejorado leans more on the expressive washed side yet still has many delicate and detailed properties mostly in the florals and tea-like finish. I hope you all enjoy this one as much as I did!
For best results, I suggest you rest this coffee for at least 4+ weeks! You should find this coffee starts to open up near week 3 and peaks toward week 5.
