This week’s Secret Stash is a fruit forward experimental natural from Cafe Granja La Esperanza! This is the Tres Dragones natural process that ferments the coffee at low temps for extended periods and has a slow drying step. The result is a fermentation forward fruit bomb of a coffee that will wow you! 


In the cup we get a natural forward presentation of stone fruits, a winey finish, deep chocolate notes, and lovely florality. Sipping on this reminds me of biting into a chocolate covered blueberries with a ton of sweet florals. When cooled, the entire structure of the cup becomes defined with tons of layering. You’d expect this type of expressiveness from an advanced fermentation but instead this showcases what is possible of the natural process!
