This release of Secret Stash comes from my friend Lynsey who founded Sorellina! We’re happy to be featuring this expressive anaerobic washed Wush Wush from producer Oscar Riascos. This coffee was grown and processed at Granja Paraiso 92 and is a strong example of advanced fermentation boosting clarity and sweetness. When hot, there’s tons of white florals, tropical acidity, and a grape acidity that lingers in the finish. When cooled there’s beautiful structure and definition of acidity with a bright lemon acidity popping up and the white grape acidity becomes very defined. The finish is candy-like and sweet similar to many coffees from GP92 making the entire cup super enjoyable to drink when cooled.
This coffee will open up 3+ weeks off roast so I suggest you hold onto some.
