This is a very cleanly processed Papayo coming from producer Norbey Quimbayo! We find very tart acidity very similar to biting into a mango that then transition into structured red fruits. This coffee's vibrant acidity is very effervescent making each sip unique! We suggest you brew this coffee fairly hard and let it rest. As with all these Apollon's Gold coffees we recommend you rest this coffee for at least 45 days. 

 

From Apollon's Gold:

This is our very first Papayo offering. While we have heard about this rare cultivar that is relatively new to the market, it’s been hard to find classic process Papayo lot so we jumped on it when we cupped a sample of this lot.

It seems like to us that Papayo cultivar has very unique acidity, especially in terms of tartness, accompanied by unique tart fruits flavors. Expect a very vibrant and juicy mango in the front with exotic flavors of Ume(Japanese plum) and tart raspberry in the finish.
