This week’s Secret Stash is an expressive naturally processed Ethiopian coming from Chelchele Washing Station roasted by Apollon’s Gold. This is a very structured and loud acidity, reminiscent of higher quality washed Ethiopians, but with the round sweetness and cleaner presentation of well processed naturals.  You can find bright tropical and blueberry notes that are acidity forward, big lychee sweetness, nice florals, with a round and clean finish. 

We suggest you push this coffee quite hard in extraction and try it at extended ratios (1:18-1:19.5) and see how it tastes. We also recommend you let this coffee rest for another 3-4 weeks for the best experience!

In the cup, you will be greeted by rambutan acidity, followed by mango sweetness, that will lead the way to an exciting finish of blueberry bubble gum.
