This week’s release is from Apollon’s Gold and it’s a really unique coffee from Colombian producer Norbey Quimbayo. In my experience, Norbey produces some of the more unique varietals such as Sidra, Papayo, and now this Caturron! This is my first time tasting Caturron and it to me behaves like a well processed caturra with lots of subtleties one may find in clean Ethiopian landrace coffees. I find very vibrant and crisp acidity that reminds me of biting into an almost strawberry with a sweet and clean honeydew finish that reminds me of a good washed Ethiopian. The recipe for this coffee is 1:18 and it’s an adapted version of a recipe Apollon’s Gold uses in their shop! You get a very transparent and balanced brew that allows the acidity and sweetness to be harmonious. I suggest you try this recipe out and see if you enjoy this coffee at this ratio otherwise brewing any of the previous week's Secret Stash recipes on this coffee will work out well.
