This Box set includes two very different expressions of COE coffees from Costa Rica and Honduras. COE #7 Costa Rica Santa Teresa Gesha has blue and red stonefruit notes and the intensity of a natural whereas COE #10 Honduras Las Acacias has clean tropical notes and tons of beautiful structure of a very well processed washed coffee! We suggest you brew and taste these two side by side so you can experience regional and varietal differences.
Please let these coffees rest for at least 3 weeks before brewing! We find washed process coffees from Prodigal to require rest and taste even better with age.

Blueberries, Cherries, Plum, Clean! From Prodigal: Roger Hidalgo grew up working on his father’s coffee farm and at just 15 years old he began his own plantation. After years of hard work expanding his farms, he founded the Santa Teresa mill in the year 2000, handling varieties such as geisha, sudan rume, pacamara, typica, SL-28, and more. Santa Teresa is a broad, regional effort— families from Panama pick the cherries, and families from Costa Rica and Nicaragua tend the farm.Santa Teresa sits at 2000 meters, allowing for cool nights that slow the fermentation and drying of the cherry. This award-winning lot was picked ripe and rested in whole cherry for two nights. It was then depulped, washed, and rested again before a final 6 hour fresh water soak and transfer to drying beds.

Cup of Excellence Honduras #10 Las Acacias - Washed Pacas
From Prodigal: This small 2-hectare farm, located in the famed Santa Bárbara region of Honduras, is planted with 60% Pacas variety, 20% SL-28, and 20% geisha. This COE-winning lot underwent a single anaerobic fermentation step. The whole cherry fermented for 72-hours in a custom-built cold room, followed by depulping and thorough washing. The coffee dried for 18 days in a solar drier, with hand-sorting to remove defects. Prior to coffee, Evin farmed vegetables, without much profit. In 2010 he began farming coffee based on advice from his father, an experienced coffee producer in his own right. Just a few years later in 2013, Evin placed 12th in the Cup of Excellence, and his success built rapidly after that. We’re overjoyed to present this coffee to you and to work with Evin for many harvests to come.
