This week’s Secret Stash release comes from my friend Jeremy who runs Preface Coffee! Preface is a new microroaster based in New York and is focusing on roasting coffees that make an impression on you.
The coffee we’re featuring is their Las Perlitas which is an expressive and sweet Colombian blend of Caturra and Pink Bourbon. This coffee to me is a great example of a very red fruit leaning profile and is a great example of why people like “pink bourbony” tasting coffees. What’s interesting about this coffee is a unique tamarind note that I haven’t found much in other washed Colombian PB. It’s well linked to the red fruit acidity and the overall finish of this coffee is nice and sweet. This is a coffee that will really open up in the following weeks and I’m always happy to support up and coming roasters with releases like this!
