Starting 2023 we released a small batch of Brian's favorite coffees to the xBloom community. Everyone loved it and had been asking him for recommendations ever since. (Re)Introducing "Brian's Secret Stash" - a curated coffee subscription featuring truly unique and interesting coffees, perfect if you are looking for an adventure.
We'd like to think Brian's Secret Stash as a ticket to a global coffee adventure, offering a platform for lesser-known roasters to shine and providing you with a whimsical journey through the world of specialty coffee, where every delivery is a cup never tasted before, a delightful surprise waiting to be discovered.

This week’s Secret Stash is an expressive naturally processed Ethiopian coming from Chelchele Washing Station roasted by Apollon’s Gold. This is a very structured and loud acidity, reminiscent of higher quality washed Ethiopians, but with the round sweetness and cleaner presentation of well processed naturals. You can find bright tropical and blueberry notes that are acidity forward, big lychee sweetness, nice florals, with a round and clean finish. We suggest you push this coffee quite hard in extraction and try it at extended ratios (1:18-1:19.5) and see how it tastes. We also recommend you let this coffee rest for another 3-4 weeks for the best experience! From Apollon’s Gold: Chelchele is a renowned washing station located in Yirgacheffe woreda, Ethiopia. Chelchele coffee, especially their natural process lot is known for its fruitiness and clean flavors. Our lot is also a plethora of ripe fruit flavors with tons of sweetness. In the cup, you will be greeted by rambutan acidity, followed by mango sweetness, that will lead the way to an exciting finish of blueberry bubble gum.
