We’ll feature that coffee later this year.\u003c\/p\u003e\n\u003cp\u003eTheir ingenuity with coffee processing highlights the brilliance of Huila coffees in Colombia. The Aji Bourbon variety is a mutation of an Ethiopian Landrace. The coffee was named Aji because the mucilage has a smell and flavor similar to red peppers.\u003c\/p\u003e\n\u003cp\u003eThe acidity is almost effervescent.
