Crafting the Future

We've worked with Diego and his team for years now and we’re constantly blown away by his skills and produce. From our first taste of his coffee, we knew that we had to know more. What grew from that first conversation gave birth to some of his best coffees including Letty, Salma, Luna & Samuel Jr. Each named after his children. "Our desire is that the second generation of our family of coffee growers can transcend history and can generate a new evolution and passion for coffee."

Unlike traditional methods that rely on the random microbial load from the natural biome, Diego's approach is nothing short of ingenious. Collaborating together, we developed the processes by which Diego meticulously selects local microorganisms, each chosen with precision, to orchestrate the fermentation process. In place of conventional anaerobic fermentation tanks, he employs precise bio reactors. Here, every aspect is measured—time, temperature, pH, sugar content, and microbial load—culminating in a symphony of controlled transformation.
