This expression of Chiroso is tasting amazing with intense levels of florals and red fruits and high levels of sweetness. In the cup I find there to be a strong presentation of red fruits in the form of raspberry\/strawberry, amazing body and sweetness, and a peach\/tropical tea finish. When cooled, the acidity becomes structured and extremely vibrant with amazing layering and the overall cup presentation is very clean with a rounder and sweet finish. From the Ascension Series, this Japanese koji processed natural is one of the most extraordinary expressions Jamison has produced. The process begins with hand picking perfectly ripe Geisha cherries, then depositing into sealed tanks with a proprietary koji bacteria strain. Cherries are then spread on raised African beds to slow dry. A papaya note becomes apparent here and there is very good intensity between the acidity and florals. The sweetness here is very tactile with a long and silky finish that becomes even more intense as the cup cools. You will find big florals, intense acidity, and lots of juicy fruit alongside a long finish of sweetness.
